Green Eggs; No Ham

Picture of the Day for 5/1/2014. Here's my latest food concoction which yielded green eggs. Of course I immediately thought of Dr. Seuss. I fried diced avocado in butter and then added eggs, cheddar cheese, and sour cream to come up with the most divine scrambled eggs. The dish looked a little off-putting, but it sure tasted great.
